Partnerships
We began working with The James Hutton Institute in 2019 and this research has underpinned the core Scottish Precision Cures process at the heart of Vanilla Labs — a precise, profile-led approach to producing commercial-grade vanilla.
We also work directly with small-holder farmers in equatorial regions, ensuring sustainable, year-round supply of freshly harvested pods. By combining advances curing technology with transparent, progressive farmer partnerships, Vanilla Labs delivers both quality and traceability — from farm to flavour.
Data-Driven, Profile-Led Vanilla
We have shaped a controlled growing environment for vanilla orchids and a defined Scottish Precision Cures process for curing vanilla with unmatched consistency.
Vanilla Labs' research-led growing environment supports each stage of the vanilla plant's cycle, with balanced lighting, closely controlled temperature/humidity, pollination support, tailored nutrition and continuous monitoring throughout.
Based on Total Control Environment Agriculture (TCEA) and carefully configured for vanilla plants, Vanilla Labs' agri-tech approach to cultivation produces Scottish-grown vanilla with traceable provenance and consistent quality.
Traditional curing focussed on shelf life, not flavour, due to limitations on transporting the product historically. We take a chef-led approach to maximise flavour and fragrance.
Our Scottish Precision Cure approach uses defined curing and fermentation steps to develop consistent, expressive flavour.
Using controlled temperature and humidity, it precisely replicates and optimises each of the five traditional stages of curing — killing, sweating, curing, drying and conditional — transforming a weather-dependent, months-long process into a consistent four-week cycle.
This opens the door to predictable quality, year‑round supply, full provenance and long‑term scalability.
Analytical AI technology helps Vanilla Labs predict outcomes, support consistency and improve understanding of vanilla plant behaviour. It is a vital tool for helping us map, monitor and refine our methods, ensuring best results.
