Our Story

Vanilla is one of the world’s most valued and beloved natural ingredients, yet its future is threatened by climate pressure, supply instability and curing techniques that have barely changed for centuries.

Vanilla Labs began with a simple question: 
How do we protect this ingredient and reveal more of its remarkable potential?

Founded in Scotland and globally connected, we're creating more stable, traceable and expressive vanilla through our Scottish Precision Cures approach, providing a more reliable, structured approach and allowing flavour to develop consistently while preserving origin.

In a global marketplace where farmed produce travels between continents every day and provenance becomes vital in a world of synthetic vanilla, a distinctly unique product like precision-cured Scottish vanilla is a true rarity — a story worth sharing with the world.

The idea

We utilise modern agri-tech to create an innovative, profile-led process for cultivating and curing vanilla - one that gives greater precision in flavour and scent and offers unprecedented stability and provenance.

Our Founders

Together, Gillian and Joe founded Vanilla Labs to reimagine how vanilla is grown, cured and valued — combining science, craftsmanship and respect for origin. Their shared vision is to protect one of the world’s most remarkable ingredients while creating a business that delivers excellence, transparency and positive impact at every stage of the supply chain.

Gillian Lane

Gillian’s fascination with vanilla began through fragrance — drawn to its complexity, warmth and emotional resonance.

Over time, that curiosity deepened into a wider passion for how technology, when applied with care, can unlock the full potential of natural ingredients.

With a background rooted in innovation and systems thinking, Gillian is driven by the belief that tradition and modern agri-tech don’t need to be in conflict. At Vanilla Labs, she focuses on precision curing, provenance, and the science behind flavour and aroma — helping to create vanilla that is expressive, stable, and traceable without losing its soul.

Equally important to Gillian is building a business with purpose: creating high-quality, skilled jobs in Scotland, supporting farming communities at origin, and helping ensure vanilla has a sustainable future in a rapidly changing world.

Joe Lane

Joe is a lifelong food enthusiast with a deep appreciation for flavour, process and the craft behind exceptional ingredients. His work has consistently focused on innovation with impact — developing ideas that balance quality, sustainability and long-term resilience.

At Vanilla Labs, Joe brings a practical, hands-on approach to flavour development and production, translating complex curing methods into scalable, repeatable systems. He is especially passionate about how thoughtful innovation can strengthen supply chains, reduce waste, and create better outcomes for both producers and consumers.

Driven by a strong sense of social responsibility, Joe is committed to building a business that supports farmers, invests in people, and contributes meaningfully to Scotland’s food and agri-tech landscape.

Now Curing

India, Western Ghats - Karnataka

WG-IND

A spice-forward vanilla with resinous warmth and long, resonant persistence, its depth and structural complexity offers something truly distinct from other more overtly creamy vanilla options and is ideal for anchoring blends rather than leading the sweetness of a dish or product.

Grown in western India at an altitude of 600-1200m in a monsoon-fed climate, this vanilla has elevated phenolic and spice compounds (eugenol-adjacent), moderate-to-high vanillin content and strong mid-palate weight with aromatic persistence.

It pairs wonderfully with cardamom, clove, cinnamon, coffee, black tea, jaggery, molasses and roasted nuts.

Sensory Notes:

Dark vanilla pod, muscovado sugar, clove and cinnamon bark, with notes of dried date, raisin, black tea, cocoa husk and a faint balsamic lift. At its base, earthy woods, subtle leather and mineral undertones.

Recommended For:

Chocolate desserts, spiced biscuits, gingerbread, dark sugar custards, spirits, savoury sauces.

The Story of Vanilla Labs

2019

Initial Vanilla Research

We conducted some early research into vanilla and established the same team we still have today with the James Hutton Institute.

2020

Procured Vanilla Orchids

We acquired our first vanilla orchid plants — a major milestone in developing our cultivation and curing processes.

2022

R&D and Partnership

We expanded our R&D into vanilla cultivation and curing methods, while establishing origin partnerships for vanilla crops. 

2025

Scottish EDGE Award

Vanilla Labs won the Scottish EDGE Missions award in recognition of our potential for global impact in vanilla production and supply.

2025

ONE SeedPod

Vanilla Labs became the first tenant of Opportunity North East's (ONE) food and drink hub, ONE SeedPod in Aberdeen, Scotland.

2025

Partnerships with Farms

Vanilla Labs established trusted partnerships with small-holder vanilla farms in Uganda, India, Mexico and Indonesia.
